Observed handwash sink to have no paper towels available. PIC stated establishment has no paper towels available and staff have been using reusable towels. Facilities must be maintained in a condition that promotes handwashing. PIC obtained paper towels for handwash sink at time of inspection. Corrective Action: Corrected at time of inspection.

Observed sanitizer buckets to have quat with a concentration of 0-100ppm with manufacturer recommendation being 200-400ppm. Observed on-site generation of sanitizer at 3 comp sink to not supply correct concentration with very little quat sanitizer remaining and no alternative quat sanitizer available at establishment. All wet wiping cloths must be stored in sanitizer buckets with approved sanitizer concentrations. Wiping cloths were placed in sanitizer buckets with approved sanitizer concentrations at time of inspection. Establishment will use chlorine bleach to sanitize food contact surfaces until on-site generation provides approved concentration. Corrective Action: Corrected at time of inspection.
