Observed tofu in the large cold holding unit at the cook line with a temperature of 63*F. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below to prevent the growth of pathogens. The PIC stated the tofu has been in the cold holding unit since 11 am and voluntarily discarded the food. An ambient air temperature taken of the unit with a min/max thermometer was 49*F. Observed 0 ppm chlorine sanitizer in the dish machine in the back area. Chlorine sanitizer should be between 50-100 ppm to ensure the dishes are properly sanitized. PIC set up the 3 compartment sink to use in the meantime. The PIC was able to fix the dish machine while inspector still onsite and it tested correctly. Correct By: Corrected At Time Of Inspection
