Suspension of permit will result if establishment is operating with broken walk-in cooler at time of re-inspection.

Observed TCS foods (see embargo list) with internal temperature of 50°F, per digital probe thermometer, inside walk-in cooler. Per PIC, no food temperatures inside walk-in cooler were recorded day of inspection. Ambient air temperature of walk-in cooler at 50°F per probe thermometer. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. All TCS foods were placed on embargo and recommended for discard. Per person in charge (PIC), all TCS foods will be discarded. Corrective Action: Corrected at time of inspection.

Observed walk-in cooler ambient air temperature at 50°F, per probe thermometer. Per PIC, no temperatures of walk-in cooler were recorded day of inspection. Cold holding equipment must have the capacity to maintain TCS foods at 41°F or below. Must repair cold holding equipment such that it maintains TCS foods at 41°F or below. PIC contacted technician to service walk-in cooler. Corrective Action: Correct prior to re-inspection in 24 hours.
