Inspector's notes
Observed packaged egg-based tortilla substitute products with internal temperature of 54-60 degrees Fahrenheit in refrigerated retail case. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. Ambient temperature of case was measured at 54'F with min-max thermometer during inspection. Unit is not critical for cold-holding for establishment. Unit may not be used to store TCS foods until repairs are completed and unit can hold cold at 41F or lower. Person in charge (PIC) had employees move egg tortilla to walk-in refrigerator to cool rapidly. Per PIC, products were placed in retail case less than 4 hours prior to inspection. Corrective Action: Corrected at time of inspection.
