Observed the mop sink faucet escutcheon plates to be disconnected from the wall. Informed PIC that the faucet needs to be sealed prior next routine inspection. Observed packages of raw bacon stored over raw shell eggs and packsged fully cooked hot dogs. Informed PIC and staff that raw animal proteins must be stored according to final cooking temperature and cannot for stored over any ready-to-eat foods. All raw animal proteins and ready-to-eat foods were properly stored at time of inspection. All raw animal proteins must be stored below ready-to-eat (RTE) foods and stored according to cooking temperature at all times to prevent cross contamination. PIC properly stored all raw animal proteins according to the final cooking temperature based on the cooking parameters in § 3-401.11 of the Food Code. Corrective Action: Corrected at time of inspection.

Observed packaging debris and loose fried corn chips on empty shelving in the chip isle. Observed a dark puddle with debris stuck in it underneath the soda can shelving. Observed dirt and food debris throughout the food isles. Informed PIC that the shelving and floors need to be cleaned and continue to be cleaned at a rate which prevents the accumulation of dirt, debris, and organic matter. Physical facility must be cleaned frequently enough to prevent accumulation of dirt, organic matter, and food debris. Must clean physical facility prior to next routine inspection.
