Observed various deli meats, cheeses, and pork fat in reduced oxygen packaging in the deli display cases. Reduced oxygen packaging is a specialized process which requires a variance from MCESD unless the product is held for no longer than 48 hours. PIC stated the vacuum packaging is used to increase the shelf life of the products. Please apply for a variance by Monday August 28th and forward the confirmation email to the inspector.
