Raw shrimp, raw fish, and cooked beef in cooler drawers below cooktop measured 51-56 degrees F, ambient temperature of unit measured 48 degrees F with min/max thermometer. Shrimp, fish, and beef were discarded while other items had been restocked within the last 2 hours and were moved to reach-in cooler. Service call was placed for unit and it will not be used until it is repaired. Please ensure all time/temperature controlled for safety (TCS) food items are maintained at 41 degrees F or below when cold holding. Corrective Action: Corrected at time of inspection.

Just test backflow RP in water heater room. Remove as RPZ at bib• Secure unistrut under ice machine, drain lines off of floor• Lights in WIC @ 4 ft candles, provide 20 ft candles• WIF door leaking air condensate into WIC• Mop sink, install drain cover and provide escutcheon on copper drain pipe • Secure prep table to wall , sink drain needs to be sealed• Drain line from prep sink needs to be lowered to drain into floor sink. Splashing onto floor• Drain dome cover at 3 compartment sink and ice machine by the soda machine inside kitchen.• Relocate paper towels and hand soap at dishwasher. Currently installed over clean dish side• Lower drain line off of 3 comp sink to prevent splashing onto floor. Floor has lots of water on it • Seal exposed wood under cook line.
