Observed uncut chubs of turkey, corned beef, and pastrami in prep cooler without date marks. Person in charge said these items had been opened within the last 2-5 days and date marked them at time. Please ensure all time/temperature controlled for safety food items are accurately date marked to ensure a safe shelf life. Corrective Action: Corrected at time of inspection. PRIORITY VIOLATION-3-501.18 - Priority: Ready-To-Eat Time/Temperature Control for Safety Food, Disposition.
