In the cold table, observed pre-portioned cooked chicken with an internal temperature range of 48-52 degrees F. PIC stated items were placed in unit about two hours prior. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. All TCS foods improperly cold held were relocated to alternative functioning refrigeration unit to rapidly cool to 41°F at time of inspection. Corrective Action: Corrected at time of inspection. Observed establishment using quaternary ammonium sanitizer at the 3 compartment sink at time of inspection. Establishment only had chlorine test strips at time of inspection. Corrective Action: Corrected at time of inspection. Cold cut meats, roast beef and ham stacked high in pans in the top of the cold table at 44*F to 48*F internally. PIC stated they had been stored as such less than one half hour. All TCS foods improperly cold held were relocated to alternative functioning refrigeration unit to rapidly cool to 41°F at time of inspection. Please do not stack TCS foods above the proper fill level. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. Eggs not treated to destroy Salmonellae can be stored in equipment that maintains an ambient air temperature of 45°F or below.
