Dishwasher observed with build-up of grease and food debris on inside walls and around the sprayer. Advised PIC to clean and de-lime dish machine at a frequency necessary to preclude accumulation of grease and food debris on inside walls. The objective of cleaning is to remove soil from nonfood contact surfaces so that pathogenic microorganisms will not be allowed to accumulate, and insects and rodents will not be attracted. It also ensures that dishes are cleaned and sanitized properly. Corrective Action: Correct prior to next routine inspection.

Employee was stopped and advised to remove gloves and wash hands before proceeding. Employee washed hands and put on new clean gloves. Discussed examples of when to wash. Per FDA Food Code 2017, food employees must wash their hands after any activity which may result in contamination of the hands. Glove use does not substitute handwashing.
