Inspector's notes
Observed raw meats in top portion of prep cooler across from woks >41*F (raw chicken 44*F, Raw beef 45*F, and raw shrimp 45*F). Also observed tofu in bottom portion of prep cooler at 45*F. Cold hold of food to be 41*F or lower. Items were moved to other coolers in facility to chill back to 41*F. As per the person in charge the top portion was open for an extended period of time for lunch rush. Bottom area dropped to 41*F from 48*F while on site. Advised owner to check temperatures of foods after meal rushes and move foods to other refrigeration to cool as needed. Corrective Action: Corrected at time of inspection.
