#22 — Proper Cold Holding TemperaturesPriority3-501.16

Inspector's notes

In the upright reach-in cooler in the kitchen TCS foods such as salted butter, American Cheese, and shredded lettuce had internal temperatures ranging from 48-52*F. The person in charge (PIC) verified the temperatures using the establishment's thermometer. The PIC stated the food item had been in the unit for more than 4 hours. The food items were embargoed and voluntarily discarded by the PIC at the time of inspection. The PIC stated the unit will not be used until it is repair/replaced and is able to hold TCS foods at 41*F. Corrective Action: Corrected at time of inspection.

Observed covered and stacked plastic containers of egg burritos, in glass door reach-in refrigerator in back in kitchen measuring 47 - 50 degrees F. Person in charge (PIC) and employees did not know how long egg burritos had been in the refrigerator. All other food items in the refrigerator were approximately 41 degrees F or below. Advised PIC that that the burritos are time/temperature control for safety (TCS) foods which must be cooled from 135 degrees F to 70 degrees F in two hours, then further cooled to 41 degrees F within four hours. Employee discarded the burritos and PIC stated they will ensure TCS foods are properly cooled. Correct By: Corrected At Time Of Inspection

Core-5-205.15 (B), C: System Maintained in Good Repair; Maintained Observed hose leaking in basement section of restaurant into a floor sink. The floor sink was filling up and not draining. All other floor sinks in restaurant appeared clear and drained normally. Advised person in charge (PIC) that plumbing shall be maintained in good repair to ensure proper operation.
