Observed 4 stacked containers of sliced tomatoes with lids on to have an internal temperature of 48-49*F. PIC stated that tomatoes were recently sliced. Containers were re-arranged with lids slightly ajar to facilitate rapid cooling. TCS foods must be cooled in: uncovered/loosely covered, shallow containers less than 4 inches deep, in equipment designed to rapidly cool, by using an ice bath, by using ice as an ingredient, or another effective means. Corrected at time of inspection.

Inspector's notes
Observed a chlorine dishwasher with 0ppm of chlorine concentration after final rinse. There were dishes being washed in dishwasher at time of inspection Chlorine test strips were available and easily accessible. PIC made attempts to prime the dishwasher, each time, there was 0ppm of chlorine after final rinse. PIC called for service and placed a 'Do not use' sign on dish machine. Advised PIC to use the 3 compartment sink until dishwasher is fixed. The quat dispenser at 3 compartment sink was dispensing quat at a concentration between 200-400ppm. Corrective Action: Corrected at time of inspection.
