Inspector's notes

Soda nozzles at drive thru fountain observed with debris build up on inner surfaces. PIC stated the nozzles are soaked in soda water daily. Inspector advised to add a step to the cleaning process to also physically remove debris from the surface of the nozzles and areas where nozzles attach (e.g. wiping, scrubbing). Please ensure food contact surfaces are cleaned in a manner and frequency that removes and prevents buildup of debris and organic matter. Corrective Action: Correct prior to next routine inspection.

#22 — Proper Cold Holding TemperaturesPriority3-501.16

Inspector's notes

Two containers of shredded cheese and a container of Pico de Gallo observed with internal temperature range of 51-53*F while being cold held at the make-line unit (Side closer to front registers). Per PIC, the unit has not been working, and they have been using ice baths for cold holding. Products were not in ice at time of inspection, and it was unclear as to how long products were on the line. PIC stated that the ice must have melted, and they voluntarily discarded products mentioned above at time of inspection. Per PIC, there is a work order i place to repair the unit. Discussed proper use of ice baths, importance of monitoring cold/hot holding temperatures and proper holding temperatures with PIC. TCS foods must be cold held at 41*F or below to prevent bacterial growth. Discussed the temperature danger zone (range between 41*F and 135*F) with PIC. Corrective Action: Corrected at time of inspection.
