Notified Person In Charge (PIC). Internal temperature of the cut lettuce was at 50*F. PIC confirmed and directed employee to immediately place into reach in unit to cool to 41*F. Verified cooled within 30 minutes. ==========Except during preparation, cooking, cooling, or when time is used as a control all TCS food to be maintained at 41°F or less. Notified Person In Charge (PIC). PIC unclogged drain to allow drainage of grey water appropriately. Excessive food debris had blocked the drainage system.
