PRIORITY VIOLATION-3-501.16(A)(2) and (B), P: Time/Temperature Control for Safety Food, Cold Holding. =====Observed 3 bags of sealed cut lettuce on pallet in back of house area. Notified Person In Charge (PIC). Internal temperature of the cut lettuce was at 50*F. PIC confirmed and directed employee to immediately place into reach in unit to cool to 41*F. Verified cooled within 30 minutes. ==========Except during preparation, cooking, cooling, or when time is used as a control all TCS food to be maintained at 41°F or less. PRIORITY VIOLATION-5-205.15 (A), P: System Maintained in Good Repair; According to Law. ====Observed main mop sink in back of house completely clogged with excessive inches of grey water pooling about to fill over. Notified Person In Charge (PIC). PIC unclogged drain to allow drainage of grey water appropriately. Excessive food debris had blocked the drainage system. Main mop sink also has additional 3 drainage systems lines leading to mop sink. ====This violation refers to repairing the plumbing system and to maintaining the plumbing system if there is a serious problem otherwise debit maintenance of the plumbing system under 5-205.15 (B)) Correct By: Corrected At Time Of Inspection
