Advised PIC the bags of boxes of ice must be properly labeled for traceback. Advised PIC to reach out to the supplier to have labeling included on future orders.Advised PIC to use a different disclosure symbol for items containing nuts as it is the same used for the consumer advisory statement. Establishment has a vacuum sealer not in use for establishment's operations. PIC stated there will be another concept under the same ownership that will have an ROP variance and product testing will be completed here. Observed Caesar dressing containing raw egg yolks store above whole produce and fruit in the walk in cooler. Observed raw beef stored above cooling rice, brussels sprouts and roasted tomatoes. Observed raw bacon stored above RTE key lime pie and bacon crumbles. All raw animal proteins must be stored below ready-to-eat (RTE) foods and stored according to cooking temperature at all times to prevent cross contamination. PIC properly stored all raw animal proteins according to the final cooking temperature based on the cooking parameters in § 3-401.11 of the Food Code. Corrective Action: Corrected at time of inspection.

Observed food debris on the can opener, meat slicer and vegetable dicer that was stored as cleaned. All food-contact surfaces must be cleaned to sight and touch. Observed the backdoor unable to fully close unassisted, allowing light to enter. Advised PIC outer entry points may allow for pest entry. Advised PIC to service the door to allow proper self-closing. Variance/HACCP applications are available through the customer portal "Permit Center" at https://maricopacountyaz-energovweb.tylerhost.net/apps/selfservice#/home.
