No County legal action will result from this inspection.Of note:-Advised PIC to install plastic curtains in the walk in cooler to aid in temperature retention in the walk in cooler on high volume days and while receiving shipment. -Discussed cooling procedure with PIC. No foods observed actively cooling or cooled since 7/7. Cook described cooling process as follows: air cooling foods until they reach room temperature while stirring regularly then moving to the cooler once they reach 70*F. Observed large containers of salsa and gravy containing more than 4 inches of cooling foods the cook stated was cooled in those containers. Advised PIC and cook on proper cooling methods and timeline. Advised PIC to utilize freezer space, if available, in addition to ice baths or ice wands.
