#20 — Proper Cooling Time and TemperaturesPriority3-501.14

Inspector's notes

Observing cooling beans with internal temperatures ranging from 44-52*F when measured with a probe thermometer. Observed the beans in 3 plastic tubs with more than 10 inches of cooling foods on the middle rack in the walk in cooler. PIC stated the beans were placed in the cooler overnight. All TCS foods improperly cooled were discarded by PIC at time of inspection. Cooked TCS foods must be cooled from 135°F to 70°F within 2 hours, and from 70°F to 41°F within 4 hours for a total of 6 hours for cooling. Corrective Action: Corrected at time of inspection.

Inspector's notes

Observed a sign at the front of the store stating that the establishment had a dog friendly patio. Spoke with PIC and explained that dog friendly patios require a permit from Maricopa County. There were no dogs present at the time of inspection. Discussed regulations for Dog Friendly patio and e-mailed PIC with the dog friendly patio permit application. Establishment does not have an approved Dog Friendly Patio permit with department. Dog Friendly Patio applications are available through the customer portal "Permit Center" at https://maricopacountyaz-energovweb.tylerhost.net/apps/selfservice#/home.
