Inspector's notes

Deep fried chicken patties in hot holding until with internal temperatures of 115-150*F. The patties on the front portion of the tray were the coldest while the ones in the back were the warmest. Other items in the hot holding unit were found to be above 135*F. The tray may have been left partially out causing the front couple of patties to drop below 135*F. PIC discarded the chicken patties. Please ensure hot held TCS food items are maintained above 135*F. Corrective Action: Corrected at time of inspection.
