Observed cooked corned beef at 49*F and raw burgers patties at 48*F in the cold holding drawers on the cook line. Ambient air temperature taken of the cold holding drawers was 46*F with a min/max thermometer. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. Per PIC, the raw burgers patties had just been prepped 30 min ago and the corned beef had been in the unit since 8 am. The raw burgers were placed into the walk-in to rapidly cool back down to 41*F, and the corned beef was discarded by PIC. Corrective Action: Corrected at time of inspection.
