Employee handled multiple baked bread items with bare hands in the packaging area. The employee was asked to discard the bread items that were handled with bare hands, wash hands, and put on gloves. Ensure that employees are limiting contamination of ready to eat foods by wearing gloves or by other approved methods. Corrective Action: Corrected at time of inspection.

Inspector's notes
Quat sanitizer in a spray bottle in the mixing room at over 500ppm. The PIC stated that the sanitizer is used for the CIP process on the large dough mixers and stated that the sanitizer would be adjusted to the proper concentration of 200-400ppm. Ensure that sanitizer is at proper concentration according to manufacturer’s directions. Corrective Action: Corrected at time of inspection.
