Inspector's notes

Observed sliced spam at prep cooler across from rice cooker at 45*F. As per the person in charge the spam was prepped at approximately 10:30 - 11:00 am. Cold hold of food is to be 41*F or lower during storage. Product was embargoed and discarded. Advised staff to monitor cold hold temperatures ay checking temperatures with a metal stem thermometer. Corrective Action: Corrected at time of inspection.

Totes were placed in walk in freezer to rapidly cool to 41*F. Advised person in charge to not nest and tightly cover foods until cold hold temperature of 41*F is reached. Rechecked temperatures before leaving and observed 43*F Corrective Action: Corrected at time of inspection. Repeat - Second Consecutive violation
