Observed coleslaw, cheese blend, and one 7oz milk in the top of the make-line unit ranging from 50*F to 55*F using probe thermometer, verified by person in charge (PIC). Ambient temperature was 60.0*F using min/max thermometer. PIC stated the items were placed in the unit from the walk-in less than four hours prior to inspection and relocated all items except the milk (see embargo form) to the walk-in to rapid cool. Corrective Action: Corrected at time of inspection.

Observed the top tray of fried chicken, in the hot holding cabinet at the make-line, with internal temperatures of 125-130F, probe thermometer, verified by PIC. PIC voluntarily discarded the fried chicken, see embargo form. Discussed the procedure for hot holding and monitoring temperatures of TCS foods. PIC will retrain employees. Maintaining cooked TCS foods at 135F or more during hot holding is required to prevent the growth of pathogens. Corrective Action: Corrected at time of inspection.
