Observed prep refrigerator in the back room with an ambient temperature of 60 degrees Fahrenheit. Per person in charge, they are looking for a repair man or new unit. Currently person in charge is rotating the items out a few times a day with fresh items but no time as a control policy is available and times are not spaced out routinely as a 4-hour time as a control policy would require. The following TCS items were located in the refrigerator at 64 degrees Fahrenheit; cut cabbage, mayonaise, and cojita cheese. Per person in charge the items were placed out at 11:00am. A 4 hour time as a control was placed on the items with a discard time of 3:00pm. Corrective Action: Corrected at time of inspection.

Observed prep refrigerator in the back room with an ambient temperature of 60 degrees Fahrenheit. Refrigeration unit is used to store TCS food. Cold holding equipment must have the capacity to maintain TCS foods at 41°F or below. Must repair cold holding equipment such that it maintains TCS foods at 41°F or below. Establishment has the ability to maintain overall cold holding needs by utilizing a working reach in refrigerator and walk in refrigerator that are maintaining food at 41 degrees Fahrenheit.
