Inspector's notes

In the walk-in cooler observed three buckets of red sauce with an internally probed temperature range of 48-55 degrees F. Person in charge (PIC) stated items were prepared the night prior and placed in the walk in to cool. Cooked TCS foods must be cooled from 135°F to 70°F within 2 hours, and from 70°F to 41°F within 4 hours for a total of 6 hours for cooling. All TCS foods improperly cooled were discarded by PIC at time of inspection. Corrective Action: Corrected at time of inspection.

Inspector's notes

In the reach in under the cold table, observed a container of cooked fish with a date mark of 04/16 and a container of cooked fish with a date mark of 04/16. RTE/TCS foods requiring date marking must be date marked within 24 hours and sold or discarded after 7 days (including the day it was made as day 1). All RTE/TCS foods past 7 days of preparation were discarded by PIC at the time of inspection. Corrective Action: Corrected at time of inspection.

Inspector's notes

Observed a variety of cooking utensils such as knives, peelers, shavers, can openers and slicers stored with visible food residue on them. All food-contact surfaces must be cleaned to sight and touch. All food-contact surfaces that contact TCS foods must be cleaned every 4 hours by washing, rinsing, and sanitizing. Upon pointing this out to PIC, they explained the utensils were not in use and threw a majority of them out at time of inspection. Corrective Action: Corrected at time of inspection.

Inspector's notes

Observed large pot of rice being held at 115° F at 3:15pm in a rice warmer on a prep table in the kitchen. PIC affirmed the rice had been there since 11am. Rice was discarded at time of inspection. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 135°F or above. All TCS foods improperly hot held were discarded by PIC at time of inspection. Corrective Action: Corrected at time of inspection.
