Observed 76°F - 78°F internal temperature range of bottled milk, deli sandwiches, and deli wraps inside open face cooler next to soda fountain, per probe thermometer. Observed 49°F - 52°F internal temperature range of 1/2 gallon containers of milk and one gallon containers of milk inside sliding door cooler, per probe thermometer. Per PIC, listed TCS foods (see embargo list) were placed into open face cooler and sliding door cooler more than four hours prior to inspection. Per PIC, temperature checks of cold holding equipment were not taken within four hours prior to inspection. Except during preparation, cooking, cooling or when time is used as a control all TCS foods shall be maintained at 41°F or below. All TCS foods improperly cold held were discarded by PIC at time of inspection. Corrective Action: Corrected at time of inspection.

Observed refrigeration unit with shelves open to the air containing various individually packaged TCS food items with internal temperatures measuring above 41°F including: Ranch Chicken Salad sandwich (57°F), Charbroiled Jalapeno Burger (51°F) and Albacore tuna sandwiches (51°F). Out of temperature items were voluntarily discarded by person in charge during time of inspection.
