Observed ambient temperature of walk-in refrigerator at 44*F. All foods holding an internal temperature of 43*F. Person in charge called maintenance and was actively checking unit and compressor during inspection. All units holding cold temperature-controlled foods should hold a temperature of 41*F or below to maintain foods at an internal temperature of 41*F. Staff to continually monitor internal temperatures of foods and ambient temperatures of unit every two hours. Establishment to order refrigeration trailer if unit is unable to reach a temperature of 41*F or below after troubleshooting. 4-501.11 - Core: Good Repair and Proper Adjustment-Equipment Predefined Comment: All equipment must be maintained in good repair at all times. Repair all equipment to a state of good repair prior to next routine inspection.
