Observed whole milk, fat milk, 2% milk, soft whip, ice cream vanilla base mix, half and half with an internal temperature of 57*f. According to PIC, items had been removed from temperature controlled environment within 2.5 hours prior to inspection and stated milk products use time as a control. Documentation for cold TCS foods were not being filled out at time of inspection. All cold TCS foods that use time as a control must be labeled with discard time and must be discarded within 4 hours. TCS foods cannot be moved back to reach-in cooler to cool down. Please follow policy guidelines to ensure health code compliance. Items were documented at time of inspection.

Observed ham and swiss croissant made from "too sweet cakes" being stored at room temperature with an internal temperature of 70*F. According to chart, croissant is allowed to be out at room temperature for 2 days. No documentation is provided to show that item is non TCS. All TCS foods improperly cold held were discarded by PIC at time of inspection. Also observed whipped cream with an internal temperature of 77*F stored at room temperature next to drive thru window. Please store TCS foods under refrigeration when not in use. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. Eggs not treated to destroy Salmonellae can be stored in equipment that maintains an ambient air temperature of 45°F or below.

Final Construction inspection conducted with site superintendent Chris S. Construction completed and approved. Inspection report was emailed to Chris S.Correct the following items prior to routine inspection:1) Provide a label for each hand sink and dump rinse sink at the front beverage area.2) Provide additional foam to the open pipes near the RO system. Trim foam and provide silicone or a semi/high gloss paint over the foam. Or provide a stainless steel or plastic cap over each pipe. This establishment/operation has demonstrated sufficient compliance to proceed with the issuance of the permit. To complete the permitting process, issuance of this permit, and begin operation, the applicant must first submit payment of the annual operating permit fee to the Department’s Administrative Services. Fees paid up to this inspection approval do not include the annual operating permit fee. PAYMENT with a credit/debit card can be made via phone at 602-506-6824, Option 2. Per MCEHC Chapter I, Regs 4 & 5, no person shall conduct an operation or operate an establishment for which a permit is required without holding the necessary and valid permit to do so. Only stainless-steel, plastic, or PEX is approved. 3) Provide power to the air curtain at the garage roll up door. Equipment inspection conducted with Site Superintendent Chris S. and RS #1471 At the time of this inspection, this project was about 85% complete. Inspection report was emailed to Chris S.Correct/address the following items prior to final inspection:1) Relocate all three RPZ backflow devices to that they are connected to the dump sink water line. Current backflows are not approved in their current location. Test and certify all RPZ backflow devices and provide the test report. Establishment will be adding a second faucet connected to only hot water for the pitcher rinser.2) Provide an additional faucet for the first basin of the three compartment sink.3) Provide dual check valve (ASSE 1022) backflow preventers upstream of each non-carbonated beverage equipment, and the Nitro cold brew. Must be stainless steel. 4) Provide a splash guard to the left side of the hand sink in the back room. 5) Label each dump sink and hand sink.6) Provide the C of O from the city. 7) Provide an air curtain to the back door. Provide a micro switch with no on/off switches. Please continue with construction according to plans, stipulation letter, and inspections. Please call (602) 526-0917 for a final inspection at 100% completion of project or if an additional onsite walk-through is needed.
