Observed hot holding unit in hallway in cafeteria with chicken bowls intended for sale to customers holding at an internal temperature of 110-125*F. Person in charge discarded of foods at time of inspection. Discussed checking temperature of units before placing foods in, reheating for hot holding temperatures, prep times, and hot holding temperatures PRIORITY VIOLATION-3-501.16(A)(1) - Priority: Time/Temperature Control for Safety Food, Hot Holding.
