Inspector's notes
Observed lactic acid sanitizer measured at 3000+ PPM being used for active warewashing at the 3-comp sink at time of inspection. The manufacturer's label on the test strips state that the optimal range for lactic acid sanitizer would be between 704-1875PPM. Discussed routine maintenance for chemical dispenser with PIC. PIC properly diluted the sanitizer to an approved concentration at time of inspection. Food-contact surfaces must be properly sanitized after washing and rinsing. Discussed the importance of proper sanitizer levels and proper monitoring of sanitizer levels. PIC relocated all food-contact surfaces to warewashing area to be washed, rinsed, and sanitized at the time of inspection. Corrective Action: Corrected at time of inspection.
