At the bar handwashing sink observed minimum water temperature of 129°F. The faucet did not have a cold water handle. An improper flow or temperature of water may lead to poor handwashing practices by food employees. Efficacy of handwashing formulations specify a water temperature of 40°C ± 2°C (100 to 108°F). The person in charge adjusted the mixing valves below the sink at time of inspection. Minimum handwashing sink temperature observed at 108°F after the adjustment. Ensure handwashing sink temperatures are within proper temperature range for proper and comfortable handwashing. Corrective Action: Corrected at time of inspection.

Observed a small tightly covered container of roasted garlic/ 62°F cooling in the pastry station reach in refrigerator. The garlic had been cooling for about an hour and a half. When placed in cooling or cold holding equipment, food containers in which food is being cooled shall be arranged in the equipment to provide maximum heat transfer through the container walls; and loosely covered, or uncovered if protected from overhead contamination, during the cooling period to facilitate heat transfer from the surface of the food. The lid of the container was removed at time of inspection to aid in the cooling process. Corrective Action: Corrected at time of inspection.

Observed a large tray of cooked potato puree cooling on the bottom of a speed rack in the walk-in cooler. According to the person in charge, the potato puree had been cooling since 11:30AM (greater than 2 hours). Internal temperature of the potato puree measured between 60-86ºF. TCS foods shall be cooled from 135ºF to 70ºF within 2 hours and cooled from 70ºF to 41ºF within 4 hours. The entire cooling process from 135°F to 41°F or less shall not exceed 6 hours. Observed two large containers of cooked tortilla soup more than 4 inches deep cooling in the walk in cooler at time of inspection. Internal temperature of the soup was 77-80°F. After discussion with the chefs it was determined the soup had been cooling for 2-3 hours. Cooked foods must be cooled from 135-70°F in the first 2 hours and from 70-41°F in the next 4 hours for a total of 6 hours. The tortilla soup was reheated to 165°F to restart the cooling process.
