Predefined Comment: Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. Eggs not treated to destroy Salmonellae can be stored in equipment that maintains an ambient air temperature of 45°F or below. After discussion with the person in charge it was determined all TCS foods had been in the cooler or ice bath since 5PM. Predefined Comment: All TCS foods improperly cold held were relocated to alternative functioning refrigeration unit to rapidly cool to 41°F at time of inspection. Internal minimum temperature of drawer coolers across the oven measured at 48.0°F. PIC agreed not to use the unit for TCS storage until it can maintain temperatures at or below 41°F. After discussion with the person in charge and reviewing the cooling logs it was determined the cheese sauce had been cooling since 10:10 AM. Internal temperature of the cheese sauces ranged between 60-62°F. Cooked TCS foods must be cooled from 135°F to 70°F within 2 hours and from 70°F to 41°F within 4 hours (6-hour total process). At time of inspection observed raw lobster tails/ 50°F, raw pork 53°F, raw beef 51°F, and raw halibut 50°F, and cooked potato/ 48°F in drawer coolers across from the grill. Except during preparation, cooking, cooling, or when time is used as a control all Time/Temperature Control (TCS) foods shall be maintained at 41°F or less. All TCS foods in the cooler drawers were within safe time parameters and were covered in ice at time of inspection to rapidly cool. Please monitor temperatures of TCS foods and repair unit so it maintains 41°F or less. Observed milk in mini fridge by the server station. The internal temperature of the milk was 57°F. Ambient temperature of mini fridge measured with min/max thermometer was 53.1°F. The milk was within safe time parameters and was moved to the walk in cooler to rapidly cool.
