Observed pipe leaking from 3 comp sink in upstairs bar, and 3 comp sink in kitchen (next to dishwasher). All plumbing must be maintained in good repair at all times. PIC had informed maintenance at the time of the inspection. Corrective Action: Correct prior to next routine inspection.

Inspector's notes

Observed a tall pot of beef au jus in the reach in cooler with an internal temperature of 64*F. PIC stated that the au jus was prepared the night prior. Informed PIC that due to not reaching the cooling parameters, the au jus needs to be discarded. PIC discarded the au jus at time of inspection. Au jus was embargoed. Cooked TCS foods must be cooled from 135°F to 70°F within 2 hours, and from 70°F to 41°F within 4 hours for a total of 6 hours for cooling. All TCS foods improperly cooled were discarded by PIC at time of inspection. Corrective Action: Corrected at time of inspection.
