Upon reinspection establishment has decided to keep open hot cheese available resulting in class 3 upgrade.Upon reinspection test strips were available.

Carbonator Observed no ASSE 1013 reduced pressure zone (RPZ) backflow prevention device installed upstream of the soda carbonator in the rear storage area of the establishment. An RPZ backflow prevention device shall be installed upstream of the carbonator to prevent contamination of the water line. Once the RPZ device is installed by a licensed plumber, the operator shall have the RPZ device tested. Will follow up at reinspection by Thursday March 14th. All walls and ceilings, including wall-floor junctures, shall be filled and maintained smooth and clean with vinyl cove base and spray foam. In addition, the ceiling light bulbs in the rear storage areas shall be replaced and the floor sinks shall be cleaned out at the 3 compartment sink.
