Observed covered container of noodles with 50*F internal temperature in lower compartment of prep cooler across from cookline, per probe thermometer. Per person in charge (PIC), noodles were cooked three hours prior to inspection and were in the cooling process. TCS foods shall be cooled in: uncovered/loosely covered, shallow containers less than 4 inches deep, in equipment designed to rapidly cool, by using an ice bath, by using ice as an ingredient, or another effective means. PIC had container of cooling noodles uncovered and placed in walk-in cooler to allow for rapid cooling. Corrective Action: Corrected at time of inspection.
