Large covered containers of fried chicken in walk-in cooler measured 75-85 degrees F. Person in charge said they had been prepared nearly 2 hours prior. Items were transferred to smaller, more shallow containers and left uncovered in freezer to finish cooling. Please ensure food items are cooled in shallow uncovered containers (135 to 70 degrees F in 2 hours or less, 70 to 41 degrees F in 4 more hours or less) to allow for most efficient heat transfer. Corrective Action: Corrected at time of inspection.

Eggrolls, cooked noodles, cooked chicken, and cooked rice in walk-in cooler measured 47-51 degrees F internally. Ambient temperature of cooler measured 47-49 degrees F with min/max thermometer. Person in charge said that most of these items had only been moved here within the last 3 hours. Fresh items were moved to working cooler or freezer at time, however eggrolls were discarded as they had been in walk-in for over a day. Service call was placed for walk-in and all time/temperature controlled for safety (TCS) food items were either voluntarily discarded or moved to a working cooler. Please ensure all TCS food items are maintained at 41 degrees F or below when cold holding. Correct By: Corrected At Time Of Inspection
