Inspector's notes

In the toppings cooler on the prep line, observed cut spinach, lettuce, and tomatoes at 48-50*F. Foods had been in the unit for approximately 2.5 hours. Foods were moved to the walk in cooler to cool. Unit was holding at 47.1*F on inspectors min max. Until unit is holding below 41*F, establishment will use other coolers for TCS products.
