The policy approved by the department is to only allow the fries 2.5 to 3 minutes to sit prior to the second cook. Please conform policy to return to the policy that has been approved by the MCESD.
Inspector's notes
Observed an employee place a raw burger patty on the grill, change their gloves, then handle ready to eat food without washing their hands. When handling raw meats, a handwash must be completed prior to returning to ready to eat foods. A glove change is not a sufficient substitute for a full hand wash. Educated employees on proper handwashing procedures and when to wash situations. Corrective Action: Corrected at time of inspection.

Talked to manager, and had employee immediately take off glove and wash hands. Ensure that employees are washing hands when switching tasks, and after touching raw beef before any other tasks in the kitchen. Correct By: Corrected At Time Of Inspection
