Inspector's notes

Observed TCS food being held on the main sandwich prep line with an internal temperature of 48-51*F. Internal temperature registered with an internal probe thermometer. TCS food included cut tomatoes, deli meats, cut leafy greens, and cheeses. Per PIC all food was placed on the line <4hrs prior to time of inspection. Min/Max thermometer was placed on line with probe touching metal registered 48*F inside the unit. All TCS foods improperly cold held were relocated to alternative functioning refrigeration unit to rapidly cool to 41°F at time of inspection. Cold holding equipment must have the capacity to maintain TCS foods at 41°F or below. Must repair cold holding equipment such that it maintains TCS foods at 41°F or below. PIC will supplement TCS food being held on line with ice baths and use Time as a Control (TAC) until unit is repaired to hold temperatures of 41*F or less. Correct prior to re-inspection on 4/24/26.

Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. Eggs not treated to destroy Salmonellae can be stored in equipment that maintains an ambient air temperature of 45°F or below. PIC will supplement TCS food being held on line with ice baths and use Time as a Control (TAC) until unit is repaired to hold temperatures of 41*F or less. Corrected at time of inspection.
