Tuna salad observed with an internal temperature of 53*F inside the reach-in freezer. Per time stamp on the product, the tuna salad was prepared at 10am this morning, confirmed by PIC. PIC stated that the tuna was being cooled in the reach-in cooler but was not dropping temp fast enough so they placed it in the freezer shortly before inspection time. More than 4 hours had elapsed since the tuna was prepared. Discussed cooling parameters.

Inspector's notes
Observed a 6QT container of shredded chicken with an internal temperature of 50*F inside the reach-in cooler. The product had yesterday's date and PIC stated that it was put in reach-in cooler to cool. Discussed proper cooling parameters and the importance of air circulation during the cooling process. All other TCS products in the reach-in cooler were below 40*F and the ambient temperature of the unit was 36*F at time of inspection. The shredded chicken was discarded by PIC at time of inspection. Cooked TCS foods must be cooled from 135°F to 70°F within 2 hours, and from 70°F to 41°F within 4 hours for a total of 6 hours for cooling. Corrective Action: Corrected at time of inspection.

For a permanent fix to this violation, check out these simple tools in our Active Managerial Control Toolbox, made especially for you. https://www.maricopa.gov/4574/AMC-Toolbox---Food-Contact-Surfaces. ------- Observed a chlorine dishwasher with 0ppm of chlorine concentration after final rinse. Chlorine test strips were available and easily accessible. There were dishes being washed at time of inspection. After two attempts to prime the dishwasher, there was 0ppm of chlorine after final rinse. PIC is to call for service. Advised PIC to use the 3 compartment sink until dishwasher can yield a chlorine concentration between 50-100ppm. The Quat solution at the 3 compartment sink was within range 200-400ppm at time of inspection. Correct By: Corrected At Time Of Inspection
