Repeat Violation Observed whole turkey roast in reach in refrigerator, tightly wrapped, with an internal temperature of 50*F. Person in charge stated food was prepared yesterday and cooled over 24 hours prior to inspection. Person in charge discarded of roast. Provided cooling guidance. Inspector's notes

The following products were observed with an internal temperature range of 48-53*F while being cold held inside the 3-door refrigerator adjacent to the steam well: cut honey dew, sliced cantaloupe, sliced tomatoes, minced sausage, sliced cheese, cottage cheese, and milk. The ambient temperature of the unit was 50*F according to the thermometers inside the unit, confirmed with inspector's min/max thermometer after 20min. Refrigerator temp log showed a record of 47*F for the 12pm temp checks. Per PIC, cut fruit and sliced tomatoes were prepared less that 4 hrs prior to this inspection, therefore, were relocated to another unit. PIC voluntarily discarded all other products out of temp. Discussed the temperature danger zone (range between 41*F and 135*F) with PIC. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. Eggs not treated to destroy Salmonellae can be stored in equipment that maintains an ambient air temperature of 45°F or below. Corrective Action: Corrected at time of inspection.
