#22 — Proper Cold Holding TemperaturesPriority3-501.16

Inspector's notes

Sliced ham, slice turkey, and sliced cheese observed with internal temperatures ranging from 49-53*f while being cold held inside the make-line unit. The ambient temperature of the unit was 40*F at time of inspection, but food products mentioned above were double panned and had been inside the unit for more than 4hrs. PIC voluntarily discarded products mentioned above. Discussed the importance of air circulation when cold holding or cooling products. Advised PIC to not double pan when storing food in the top compartment of the make-line unit. Corrective Action: Corrected at time of inspection. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. Eggs not treated to destroy Salmonellae can be stored in equipment that maintains an ambient air temperature of 45°F or below.

Soup in a deep container observed cooling in walk-in cooler with saran wrap over it. The internal temperature of the soup was 143*F (not yet within the cooling parameters). PIC transferred the soup into a shallow container with corners open to allow heat transfer. Discussed importance of air circulation and cooling parameters. Corrective Action: Corrected at time of inspection.
