Observed front display fridge with min/max thermometer used for gluten free pies at 50F. Manager reset the machine and moved the recently placed pies back to the walkin. Ensure all cold holding equipment is able to keep foods at 41F or less. Corrective Action: Corrected at time of inspection. Facility now reset and back down to temperature. 3-501.15 (A) - Priority Foundation: Cooling Methods. Addl Notes: Observed coconut filler for pies that was cooling in deep large buckets on the ground, with saran wrap on top. Items were at 129-132F after 1 hour of being out at room temperature. Staff said they usually keep it there for 2 hours before being put in walkin. Talked to staff about cooling techniques and began using freeze sticks. Ensure that cooled foods make it to below 70F within 2 hours and 41F within 6 hours total. Send manager the cooling methods handout. Corrective Action: Corrected at time of inspection.

According to the manager, the hose is used as a pot rinser. Manager was instructed to remove the hose. To complete the permitting process, issuance of this permit, and begin operation, the applicant must first submit payment of the annual operating permit fee to the Department’s Administrative Services. Fees paid up to this inspection approval do not include the annual operating permit fee. PAYMENT with a credit/debit card can be made via phone at 602-506-6824, Option 2. Per MCEHC Chapter I, Regs 4 & 5, no person shall conduct an operation or operate an establishment for which a permit is required without holding the necessary and valid permit to do so. Payment with a credit/debit card can be made on-line via select “Pay a Fee” at esd.maricopa.gov. Please note that if you select payment via online, the annual operating permit fee invoice may take up to 7 business days to post online. Also, checks and money orders are accepted via US Mail. Equipment inspection.This is the first walk-though for construction.The establishment has opened prior to opening final permit approval.The permit is not approved.You are hereby notified that you are operating this establishment in violation of the MCEHC. Per Chapter 1, Regulation 4(a) “No person shall conduct an operation or operate an establishment for which a permit is required without holding the necessary and valid permit to do so, unless otherwise specified in this Environmental Health Code.” County legal action may result due to violations observed during this inspection. Correct the following list of items for final permit approval:(1) Re-connect the self closure on the back door.(2) Provide a spill-proof, pressure vacuum breaker on the water line at the tilt kettle. The backflow must be tested. Provide test report(3) Provide a second swing arm faucet for the 3-comp sink.
