Observed cheese sauce at 57F inside walkin. Sauce had been prepared 2 hours ealier and thawed in thawing sink. Talked to staff about thawing techniques, and emailed thawing handouts for staff. Ensure that thawing foods are thawed in walkin, or in the thawing sink under running cold water and foods kept at 41F or less. Manager cooled foods again and put in ice baths to get to below 41F.
