Inspector's notes

Prep cooler had the following TCS foods measuring an internal temperature of 51-55'F: diced tomato, shredded lettuce, shredded cheese, sour cream, and various salsas. Per person in charge food had been placed into cooler <4 hours prior. Staff began to place TCS food into an ice bath. Ambient air temperature of cooler measured 67.8'F with min/max thermometer. Do not hold any TCS foods in cooler until they are able to held at 41'F or lower. Corrective Action: Corrected at time of inspection.

Ambient air temperature of prep cooler in kitchen measured 67.8'F with min/max thermometer. Per person in charge a technician is already coming out over weekend to service a different cooler in establishment and can work on prep cooler as well. Establishment will temporarily use ice baths for TCS items. A re-inspection will be conducted to ensure that cooler is able to hold TCS foods at 41'F and lower. Corrective Action: Correct prior to re-inspection.

Discussed with person in charge about monitoring and removing salsa to rapidly chill if temperature does not come down in salsa bar. TCS foods shall be held at 41'F or lower when cold holding.
