Only employee on shift was unable to identify the correct sanitizer concentration for dishes at time of inspection. This employee stated that they are signed up to take the Food Manager class next week which will help identify and correct gaps in knowledge. Also observed a products with date marking over 7 days old. Staff stated the item had been frozen and thawed today and redated the food with the correct date mark at time of inspection. Retrained staff on sanitizer concentrations, date marking, and best practices for freezing. Corrective Action: Corrected at time of inspection.
