Observed a pot of cooked corn on top of a turned off burner in the back kitchen counter with internal temperature of 81*F. PIC stated that corn was cooked the previous night and left out with no intention of cooling. PIC stated item would have been reheated to hot hold and serve. PIC voluntarily discarded pot of corn during the time of inspection. Ensure that food in hot holding is maintained at 135*F or above to prevent bacterial growth or follow proper cooling procedures.
