Observed raw chicken wings stored in ice bin with an internal temperature of 52*f. It was determined ice bin was not filled all the way to ensure wings stay cold. Discussed importance of maintaining ice level high to ensure food remains at or below 41*F when cold holding. PIC added more ice to bin at time of inspection.

Observed blanched fries staggered in plastic containers cooling at room temperature without a time stamp. Internal temperature of fries was 106*F at time of inspection. PIC, moved fries to walk-in cooler to rapidly chill. According to PIC, fried had been at room temperature for less than 15 minutes and discussed importance of monitoring fries while in the process of cooling to ensure they dont drop below 135*F. TCS foods must be cooled in: uncovered/loosely covered, shallow containers less than 4 inches deep, in equipment designed to rapidly cool, by using an ice bath, by using ice as an ingredient, or another effective means.

Observed blanched fries staggered in plastic containers cooling at room temperature. Internal temperature of fries was 86*F at time of inspection. According to PIC, after fries are blanched they must cool for 2 hours at room temperature, before moving to walk-in cooler. Documentation for Internal procedures stated that fries must be cooled to 70*F within 2 hours and to 41*F within the next four hours, but did not indicate that they must cool under refrigeration.

Final Construction inspection conducted with site superintendent with Romi G. Construction completed and approved. Inspection report was emailed to Romi G. This establishment/operation has demonstrated sufficient compliance to proceed with the issuance of the permit. To complete the permitting process, issuance of this permit, and begin operation, the applicant must first submit payment of the annual operating permit fee to the Department’s Administrative Services. Fees paid up to this inspection approval do not include the annual operating permit fee. PAYMENT with a credit/debit card can be made via phone at 602-506-6824, Option 2. Per MCEHC Chapter I, Regs 4 & 5, no person shall conduct an operation or operate an establishment for which a permit is required without holding the necessary and valid permit to do so. Payment with a credit/debit card can be made on-line via select Pay a Fee at esd.maricopa.gov. Please note that if you select payment via online, the annual operating permit fee invoice may take up to 7 business days to post online. Also, checks and money orders are accepted via US Mail. If you select payment via US Mail, for further instructions please refer to the printed invoice. No operating permit is valid, until the permit fee is received by the Department.
