Person in charge (PIC) to manually dispense sanitizer into 3-compartment sink and test sanitizer concentration levels until dispenser is repaired. Observed gallon container of milk with 48°F internal temperature, per probe thermometer, inside Coca-Cola refrigerator across from register desk. Per PIC, gallon container of milk was bought from store two hours prior to inspection. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. Gallon container of milk improperly cold held was relocated to alternative functioning refrigeration unit to rapidly cool to 41°F at time of inspection. Corrective Action: Corrected at time of inspection.

Inspector's notes

Observed refrigerator in back of establishment with an ambient temperature measuring between 54-55F. Per PIC, the unit holds temperature in the morning and gradually returns to temperature when kept closed. All TCS food was able to be moved and relocated to a cold holding unit and returned to cold holding temperature within time frame (4 hours). Unit shall not be used for the storage of TCS foods. With current refrigeration capacity establishment is only able to cold hold food on premises and does not have space to adequately cool foods or receive any additional food. A re-inspection will be conducted to ensure enough refrigeration is available to handle normal food preparation of establishment. Reviewed with person in charge stopping any advanced food preparations or receiving of food until adequate refrigeration is restored. Cold holding equipment must have the capacity to maintain TCS foods at 41°F or below. Must repair cold holding equipment such that it maintains TCS foods at 41°F or below. Correct prior to re-inspection.

OC re-inspection for a Class 3 10+ E&D permit was conducted with owner Elizabeth M. by appointment. The establishment is still approved to operate. Please address the following items prior to the routine inspection: 1) Trim the new open vent drains for the three sink and prep sink plumbing. The vent pipes must be 1" below the compartments. 2) Continue caulking around escutcheon plates and plumbing penetrations. 3) The residential fridge unit is not approved for milk products. The operator indicated that they will utilize the unit for non-TCS foods. Provide an NSF, commercial or equivalent refrigerator for any milk storage. MCESD inspection report was delivered via email. No County legal action will result from this inspection.
