In walk-in cooler a pan of cooked chicken had a date mark of 4/3, a pan of deli turkey a date mark 3/26, and pan of pasta date mark of 4/3. Staff was uncertain if dates were correct or when items had been prepared. As it could not be determined when food had been prepared it was embargoed. Also in walk-in a sheet tray of meatballs, pan of pasta, and pan of red sauce did not have any date mark. Kitchen employee was able to provide dates that items were made and properly date marked. RTE/TCS foods requiring date marking must be date marked within 24 hours and sold or discarded after 7 days (including the day it was made as day 1).
